Roasted cod with tomatoes and green beans

Here’s another delicious recipe well worth a try. This recipe is good for 2 persons if you have it as light meal.

We need the following ingredients:

2 fillets skinless cod.

Pick bunches of cherry tomatoes on the vine. Look how beautiful these tomatoes are.

Grab a bunch of this delicious Basil, leaves and stalks separated.

IMG_7431Zest of 1 lemon plus juice. And a couple of bay leaves.

We need 3 – 5 garlic cloves, crushed. Honestly, I would use one bulb, and quite frankly garlic is the best and it goes very well with tomatoes. It’s a common knowledge that garlic has the power to combat and cure illness like common cold and flu, high blood pressure etc.  Good for us health wise.

  Salt and pepper to taste
4 Tablespoon olive oil or depending on how saucy you want your fish to be.

IMG_7439-0Fine green beans, boiled for 3 minutes until perfectly tender. Drain & set aside.

Now let’s carry on.

IMG_7443Place the tomatoes onto a baking tray, drizzle with 4 tbsp. olive oil, add in the bay leaves, crushed garlic, and season. Place in a pre-heated oven and roast for 3-5 minutes just until the skins are starting to break apart.

IMG_7620Time to take out the tray with the slightly roasted tomatoes. Add the fish, drizzle with lemon juice, a little bit of olive oil, top up with lemon zest and season. Place it back in the oven..

Sit and wait for 8 minutes..

 Divide the beans and tomatoes between plates and top with cod. Garnish with basil leaves and some of the remaining lemon zest. Absolutely perfect!!
