Here’s another delicious recipe well worth a try. This recipe is good for 2 persons if you have it as light meal.
We need the following ingredients:
2 fillets skinless cod.
Pick bunches of cherry tomatoes on the vine. Look how beautiful these tomatoes are.
Zest of 1 lemon plus juice. And a couple of bay leaves.
We need 3 – 5 garlic cloves, crushed. Honestly, I would use one bulb, and quite frankly garlic is the best and it goes very well with tomatoes. It’s a common knowledge that garlic has the power to combat and cure illness like common cold and flu, high blood pressure etc. Good for us health wise.
Fine green beans, boiled for 3 minutes until perfectly tender. Drain & set aside.
Now let’s carry on.
Place the tomatoes onto a baking tray, drizzle with 4 tbsp. olive oil, add in the bay leaves, crushed garlic, and season. Place in a pre-heated oven and roast for 3-5 minutes just until the skins are starting to break apart.
Time to take out the tray with the slightly roasted tomatoes. Add the fish, drizzle with lemon juice, a little bit of olive oil, top up with lemon zest and season. Place it back in the oven..
Sit and wait for 8 minutes..
