We need 125 g salted butter, softened.

1 large egg

1/2 cup light brown sugar. Sugar used can vary by recipe. I’ll explain next time why.

1/3 cup granulated sugar. If you don’t want it too sweet, reduce the sugar. I do it all the time.

230g Self-raising flour (not a hundred)

2 of these amazing milk chocolate bars, Chunks.  I mean chocolates are amazing right? in whatever form!  P.S Any brand will do.

A few drops of vanilla extract.

1 tsp. Salt (strictly NO PEPPER!).Unfortunately I only have this image to use.

Cream the butter and sugar until fluffy. Whisk in egg and vanilla extract

Very carefully add self-raising flour and fold.

Caution: Explosive flour.

Add our chocolate chunks.

Using ice-cream scooper, carefully scoop up cookie dough on a baking tray (greased or can use foil). Bake in a pre-heated oven for 10-15 minutes.

They’ve come out looking sad and wrinkly. but who cares about the appearance? No one will complain after devouring these cookies! It’s all about the taste. Good luck!

  1. I’ve been in the lucky position to have these cookies for breakfast, and lunch, and after lunch… They are fantastic, crisp on the outside and soft and gooey on the inside. Sweet but not too sweet and the chocolate is an added delight. They are perfect for winter or any time you need the comfort of a good cookie!
    Well done and thank you!
