Another amazing, quick and easy banana recipe. It’s light, moist and I have never loved any muffin more than a banana muffin! Are you ready to try it out? Note: Very ripe bananas are key to a beautiful and gorgeous smelling muffin, but mind that when the banana ripen the sugar content of the fruit also increases. You might want to reduce the sugar added to the ingredients.
Let’s carry on with the baking…
Banana Muffin Ingredients:
3 Large over ripe bananas
2 Large eggs
1 tsp. Vanilla extract
100 ml Sunflower oil
1 tsp. Baking soda
1 tsp. Cinnamon ground
180g Light brown sugar
185g Plain flour
1/4 pinch of salt (optional)
Using an electric hand mixer beat the sugar and egg together until thick and pale.
Add the oil and Vanilla extract, beat again until the mixture is smooth.
Sift together our dry ingredients (flour, salt, baking soda, ground cinnamon) in to the mixture. Be extra gentle folding the dry ingredients.
Slowly beat until it’s all well combined.
Stir in the mashed bananas and again on a low speed mix well.
All good to go.
Divide the mixture between the muffin cases, top with fresh or dried banana chips. Bake in a pre-heated (180-190 degrees) oven for 20-25 minutes.
Best serve slightly warm.
