How do we describe banana bread? DELICIOUS!! Most of the time we end up with overripe bananas, banana is a well-known source of potassium, which regulates blood sugar, a good energy booster and increased digestion. Don’t toss your overripe banana to waste, why not bake these amazing “the bomb” mini loaf. Why mini loaf? It’s a good to go size.
Pre-heat oven (Gas 3/ 160 degrees)
10 oz. plain flour
2tsp baking powder
1 cup margarine
1 cup mixed walnuts and pecans
3/4 cup sugar
a pinch of salt
4 medium size eggs
4 overripe bananas
small loaf cases
Banana has so many culinary uses, this particular overripe one, the “black sheep” in the banana kingdom has more sugar content and brings out flavour. If you are to ask me what’s my favourite scent on me? I would say the smell of true, well baked banana bread! with a hint of vanilla 🙂 And the best part is, apart from all the lovely smell, I also get to eat the bread :p
Cream the butter and sugar together until smooth, add eggs one at a time and mashed bananas. Beat again until well blended. Time to slowly add the flour into the mixture.

I lined the roasting tray with baking parchment to avoid spillage and overflowing mess (simply because I don’t want to wash up) 🙂 Now divide mixture between small loaf cases, sprinkle with roughly chopped nuts and a bit of chia seeds (Optional). Bake for no longer than 20-25 minutes.
