Make the most of warm summer days by cooking this perfect light meal for everyone. It’s very easy to make, you simply have to marinate the chicken in spices for as long as possible! Okay, let’s say overnight up to 2 days’ maximum. This way the meat will become tender and flavourful. Keep refrigerated until you are ready to bring it up on a hot grill to cook & have the best alfresco lunch or dinner!
Marinating Ingredients:
12 pieces boneless chicken meat, thigh or breast
4 tablespoons olive oil
1 tsp dried oregano
1 tsp dried mint
1 tsp dried cumin
1 tsp dried coriander
1 tsp smoked paprika
zest and juice of 1 lemon
Crushed garlic
Salt & pepper
Serve with:
200g Greek style yoghurt
Half of cucumber
1 small garlic clove, crushed
Juice of 1/2 lemon
Sprinkled with chopped mint & pepper (optional)
1 gem lettuce
4-5 fresh large tomatoes, chopped
1 red onion, thinly sliced
1 lemon sliced into wedges to serve
6 Store-bought pitta wrap or bake if you have plenty of time
You will need:
Metal or bamboo skewers
Method:
First step is to heat up a grilling pan. Take out meat from the fridge and thread the pieces on to the skewers. Put and cook the chicken on the hot grill for 15-20 minutes. Over cooking the meat will make it dry.
Mix the spices plus the meat in a bowl, make sure every pieces of meat is well coated.
Halve the cucumber, remove the seeds and dice. Combine with yoghurt, lemon juice, pepper, and sprinkle with chopped mint.
Chopped tomatoes with or without the seeds that’s fine. Although you will have to eat it immediately otherwise the seeds will make it watery. Sprinkle with some salt and pepper.
Heat up another pan to warm the pitta wraps, flip occasionally. Arrange and serve!
