Fish glazed with a hint of Asian flavours. This healthy recipe is incredibly delicious and super easy to make. With the basic ingredients for the glaze, all you need to look forward to is whom to share this meal with. I’m very positive this is something that everyone in the family will enjoy. If you don’t fancy fried rice, this goes well with steamed vegetables too.
4 Boneless Salmon fillets, about 500 gram skin on
3 tbsp Dark soy sauce
1 tbsp. Honey
1 tbsp. Grated ginger
1 tbsp. Olive oil
a pinch of salt
Garnish with chopped coriander or spring onion (in my case it was spinach and rockets)
Marinating time: 30 mins or over night
In a bowl mix the soy sauce, honey, grated ginger, pepper and olive oil marinade. Wash the salmon fillets and pat dry, fish lay flat on an oven proof baking dish/tin and tip in the marinade. Cover with foil and keep in the fridge, marinating for 30 minutes.
Roast in 180 degrees oven for 20 minutes or until perfectly brown and the sauce has thicken a little.
Serve with special fried rice!
Special fried rice ingredients:
4 rashers streaky bacon, diced
1/2 cup peas
2 eggs, roughly chopped if fried separately
4-5 cups of plain white rice
1 tbsp olive oil
Oil in a pan, add and crisp the bacon and eggs and the rest of the ingredients all together. No salt needed as we already have salted bacon.
