Spicy Chicken and Avocado Wrap

Wraps are perfect for a relaxing lunch. Less effort but fantastic food on the table. It is also great when you are on the go. Our days can be very busy sometimes, but that’s not an excuse to miss lunch and starve yourself! 

Ingredients: 

2 Chicken breast thinly sliced and marinated overnight

1 avocado, stone removed

2 perfectly ripe tomatoes 

2 – 3 tbsp. crème fraîche

salad leaves or fresh herbs

salt and pepper

Tortilla wraps

Marinate:

Meat

2 tbsp olive oil

garlic cloves, crushed

a pinch of pepper

1 tsp chili flakes or powder

1tsp coriander seeds

Juice of 1/2 lime

Marinate the meat the night before, for a more intense flavour!

Method:

Start off by making the avocado sauce, mash the avocado, add crème fraîche  and a pinch of salt then put aside. Heat up a grilling pot over high heat. When piping hot, drop the meat straight onto it and fry for 3-5 minutes. Make sure you don’t let the meat dry out. 

For plating: Spread avocado sauce or salsa or guacamole (confused) onto each warm wrap. Pile and arrange meat and salad on top. Serve straight away!
